RESUMEN
La deshidratación y el desecado son los métodos de conservación más antiguos utilizados a través de la
historia de la humanidad. Los alimentos deshidratados y/o desecados son aquellos alimentos frescos a los
que se les ha extraído el agua mediante métodos artificiales o naturales con el fin de disminuir el riesgo de
contaminación y aumentar la vida útil. Antiguamente, frutas, granos, vegetales, carnes y pescados, se
secaban al sol para tener alimentos en épocas de escasez. Técnicamente podríamos decir más claramente
que el deshidratado es la reducción de la cantidad de agua del alimento aplicando el calor artificial
(aire previamente calentado, superficies calientes, etc.). En cambio, el desecado es la reducción de la
cantidad de agua mediante el tratamiento del alimento en condiciones ambientales (sol, viento, etc.), es
decir, de manera natural o artesanal.
En la primera parte del proyecto se utilizó un deshidratador perteneciente a la Fundación Banco de
Alimentos. En la segunda parte, con el financiamiento de la Universidad de San Pablo-T, se adquirió un
horno eléctrico por convección.
El objetivo de este trabajo fue realizar deshidratados con el horno eléctrico y comparar la eficiencia del
proceso con respecto a los deshidratadores tradicionales.
En esta oportunidad se realizó el deshidratado de Tomates (Solanum lycopersicum ), sin tratamiento
previo. Se evaluaron las características organolépticas de los mismos y se realizó la prueba de los 7 días
luego del deshidratado obteniendo buenos resultados. Dado que el horno tiene características de calor por
convección con una temperatura mínima de 100 °C, y la desnaturalización de las proteínas se realiza a
temperaturas superiores a 70 °C, se mantuvo la puerta semiabierta del horno hasta lograr disminuir la
temperatura de en un rango de 65°C a 70 °C. Se pudo observar en este primer ensayo una marcada
reducción del tiempo de deshidratación en este fruto respecto al realizado en una deshidratadora
tradicional. Debido a la pandemia de Covid-19 no se pudo continuar con otros frutos momentáneamente.

SUMMARY
Dehydration and desiccation are the oldest preservation methods used throughout human history.
Dehydrated and / or dried foods are those fresh foods from which the water has been extracted by
artificial or natural methods in order to reduce the risk of contamination and increase the shelf life.
Formerly, fruits, grains, vegetables, meats and fish were dried in the sun to have food in times of scarcity.
Technically we could say more clearly that dehydration is the reduction of the amount of water in the
food by applying artificial heat (previously heated air, hot surfaces, etc.). On the other hand, drying is the
reduction of the amount of water by treating the food in environmental conditions (sun, wind, etc.), that
is, in a natural or traditional way.
In the first part of the project, a dehydrator belonging to the Bank of Food Foundation was used, in the
second part, with financing from the University of San Pablo-T, an electric convection oven was
purchased.
The objective of this work was to carry out dehydration with the electric oven and to compare the
efficiency of the process with respect to traditional dehydrators.
On this occasion, the dehydration of Tomatoes (Solanum lycopersicum) was carried out, without
previous treatment, the organoleptic characteristics of the same were evaluated, the test of 7 days after
dehydration was carried out giving good results. The oven has characteristics of heat by convection with a
minimum temperature of 100 ° C, Denaturation of proteins is carried out at temperatures above 70 ° C to
avoid this phenomenon, the oven door was kept semi-open until the temperature was reduced within a
range 65 ° C to 70 ° C. Due to the CoVid 19 pandemic, I cannot continue with other fruits momentarily.
A marked reduction in dehydration time was observed in this first trial in this fruit.
